Holyland Shmura Matzo, 16 oz, is a handmade matzo that is kosher for Passover and used during the Seder meal on the first two nights of Passover as a symbol of haste with which the Israelis left Egypt, as they did not have time for their bread to rise. Once the matzo is baked and inspected for any irregularities, its hand packed to maintain its integrity. Shmura means watched or guarded and refers to the meticulous process of making this matzo to ensure it remains free from any leavening agents, which are prohibited during Passover. This matzo is baked in an extremely hot oven for a very short period of time - typically less than 18 minutes from the time water first touches the flour. This process ensures that there is no opportunity for leaving. Throughout the process, from wheat selection to baking, a rabbi is present to ensure the strict rules of Passover are observed.
